Can anyone tell me what the difference is between the two?

Without having them in hand, I can only speculate.  Maybe the cardstock is heavier on one.  To me the retail looks more lighter then the other one, specifically on the back where his name is.  Though that could just be a scanning thing.

I found this on a link at the bottom of the set overview

NOTE: The base cards that were inserted into Hobby ("SE") packs were stamped with silver holographic-foil, while retail base cards are stamped with flat silver foil.

I could have quickly answered that one. I STILL get that question all the time. And it is correct that retail is plain silver foil and hobby is holofoil (the Ultra logo and around the name).

Do you have the cards to compare the two? It looks to me like the silver outline is the same on both, but the color on the name is either flat or holo-foil. The two cards I originally posted are the same card. The one I have in hand has flat blue lettering.

The foil is the difference, not the color of the name. The color of the name was team-specific. I do have some cards where I have both versions. They also did it in football that year. Here's both versions of DeAngelo Williams from the NFL set (left = hobby, right = retail):

Happy to help, AK. Any other questions about the difference b/t retail and hobby for 2000-2010? I probably know the answer without looking for it.

Also, I added release info to the 2007 Ultra Retail listing to explain the difference AND put in an IR to remove the incorrect front scan for the Ichiro hobby card.
