I don't think you're being too hard on them. If any one of us were to do anything that we acted like we were completely knowledgeable on, and then it was discovered through our actions that we weren't so knowledgeable, our credibility would be shot to...well, you know. Maybe that's not the case for these guys breaking online with a huge following, but it would certainly make me go look elsewhere.
If you're going to break a product, you should have an idea of what's going on. Maybe you didn't realize so-and-so was traded to this team or that team; that happens. But some research on the product and the contents before starting would be good.
Regarding breaks themselves, I usually follow Billy's lines - I don't like them. I don't like that the hobby has become so enamored with the "sick hitz" that everyone is chasing. I occasionally buy into a fellow blogger's baseball breaks for something like $10 or so; they're usually a couple boxes of mid-1990s or mid-2000s baseball and maybe a new blaster. There's little cost, you get cards of the team you collect, and it's fun to participate. There's no disappointment if the hits aren't found.
If you're watching breaks, fine. If you like to participate to get cards that you normally wouldn't be able to obtain, fine and smart. If you're participating in breaks to get those aforementioned "sick hitz", I personally don't like that but hey, we each collect our own way - no harm, no foul.
I could go on and on about the hobby and it's box or even case breaks, but I think I'll stop now before I ramble too far and get grumpy
